Super Healthy Fruity Almond Pancakes
Feeling hungry? Try this nutritious take on the classic American pancake, they make a great breakfast addition or as a snack to stop you reaching for that third biscuit!!
What you need:
1 mashed banana
Small handful of blueberries ( can also use raisins or choc chips if feeling like a treat )
25g ground flaxseed
2 tablespoons of almond butter
2 tablespoons of maple syrup ( or agave nectar if you prefer)
1 teaspoon cinnamon
1 tablespoon vanilla bean paste
Combine all ingredients in a large mixing bowl.
Stir together until smooth – no need to be delicate! By hand is fine or use a hand whisk if you have one.
Then give it a little taste – add more syrup if needed.
Heat a little coconut oil in the pan.
Pour the mixture into mini pancakes maybe 2 or 3 depending on the size of pan
Cook for 2/3 mins each side or until golden
Serve Immediately. We love them with a little maple syrup but you can add sliced banana or a dollop of Greek yoghurt if you prefer. One of our team adds Nutella! Enjoy.
